This recipe is great, but has a lot of text, and I’ve found myself summarising it before. For future reference:
Ingredients
- 2 large egg yolks
- 1 dessertspoon lemon juice
- 1 dessertspoon white wine vinegar
- 110g block butter, softened
- Salt and freshly ground black pepper
Method
- Egg yolks + seasoning in blender.
- Heat lemon juice and white wine vinegar to simmering, blend in.
- Heat butter to foaming, blend in in a trickle. Use a spatula to ensure everything is incorporated.
